Ingredients
  

For the potatoes
  • 4-5 pieces small/medium-sized potatoes, cubed Yukon Gold is recommended for creaminess.
  • 2 tablespoons olive oil Extra virgin if preferred.
  • 1/2 teaspoon salt For seasoning the potatoes.
  • 1/2 teaspoon pepper For seasoning the potatoes.
  • 1 teaspoon garlic powder Adds flavor to the potatoes.
  • 1 teaspoon paprika Adds color to the potatoes.
For the chicken
  • 2 pieces chicken breasts, cubed Boneless recommended.
  • 1/2 teaspoon salt For seasoning the chicken.
  • 1/2 teaspoon pepper For seasoning the chicken.
  • 1 teaspoon paprika For seasoning the chicken.
  • 1 teaspoon onion powder For seasoning the chicken.
  • 1 teaspoon Italian seasoning For seasoning the chicken.
  • 2 tablespoons butter For cooking the chicken.
  • 2 tablespoons minced garlic Using jarred for convenience.
  • Buffalo Wild Wings Garlic Parmesan Sauce Use according to taste.
For topping
  • 1 cup shredded mozzarella cheese For topping the skillet.

Method
 

Preparation of Potatoes
  1. Wash and peel the potatoes, then cut them into small cubes.
  2. Toss the cubed potatoes in olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
Cooking the Potatoes
  1. Preheat your air fryer to 400°F.
  2. Cook the tossed potatoes in the air fryer for about 20 minutes, shaking the basket a couple of times.
Seasoning the Chicken
  1. Cube the chicken breasts and season with salt, pepper, paprika, onion powder, and Italian seasoning in a bowl.
Cooking the Chicken
  1. Heat the butter in a skillet over medium-high heat.
  2. Add the seasoned chicken cubes and cook until they reach an internal temperature of 165°F.
Combining Ingredients
  1. Stir in minced garlic and drizzle in the Garlic Parmesan Sauce, cooking for an additional 1-2 minutes.
  2. Add the cooked potatoes into the skillet and mix to coat with the sauce.
Finishing Touches
  1. Sprinkle the shredded mozzarella cheese on top and either cover the skillet to melt or broil for a few minutes until bubbly.

Notes

Customize with leftover veggies as desired. Pair with salads or garlic bread. Sprinkle extra cheese before serving.
