  • 1 teaspoon dried rosemary Fresh is better but dried works.
  • 1 teaspoon dried thyme Dried is more convenient.
  • to taste Salt and pepper Use sea salt for a fancier option.
For the Mashed Potatoes
  • 2 pounds potatoes, peeled and cubed Russets work best for mashing.
  • 1/2 cup milk Any type of milk, almond works too.
  • 4 tablespoons butter Key for creamy mashed potatoes.
For the Glazed Carrots
  • 1 pound carrots, peeled and sliced Rainbow carrots add color.
  • 2 tablespoons honey For sweetness in the glaze.
  • 1 tablespoon butter For sautéing.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Coat the chicken breasts in the mixture and place them in a baking dish.
Cooking Chicken
  1. Bake chicken for 25-30 minutes or until cooked through.
Cooking Potatoes
  1. Meanwhile, boil the potatoes in salted water until tender, about 15 minutes.
  2. Drain and mash with milk and butter, adding salt to taste.
Cooking Carrots
  1. In a skillet, melt butter over medium heat, add carrots and honey.
  2. Sauté until tender and glazed, about 10 minutes.
Serving
  1. Serve the chicken with creamy mashed potatoes and glazed carrots.
  2. Sprinkle parsley on top for a finishing touch.
