  • 2 tablespoons olive oil Extra virgin if desired
  • 4 cloves garlic, minced More garlic can enhance flavor
  • 1/2 teaspoon sea salt Regular salt works too
  • 1/4 teaspoon black pepper For flavor
  • 1 teaspoon dried Italian herbs Substitute with preferred herbs if needed
  • 2 tablespoons unsalted butter Enhances flavor
  • 1/4 cup chicken broth Check for added sugars in brands
  • 2 tablespoons chopped fresh parsley For garnish and fresh flavor

Method
 

Preparation
  1. Season the chicken breasts with salt, pepper, and Italian herbs.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add chicken breasts to the skillet and cook for about 5-6 minutes on each side until golden brown.
  4. Remove the chicken and set aside, but do not clean the skillet yet.
  5. Lower the heat to medium and add the butter and minced garlic; sauté for 1-2 minutes until fragrant.
  6. Pour in the chicken broth, scraping up the browned bits from the bottom of the skillet.
  7. Let the mixture simmer for about 2-3 minutes to thicken the sauce.
  8. Return the chicken to the skillet, spooning the garlic butter sauce over each breast, and heat through for another 2-3 minutes.
  9. Garnish with chopped parsley and serve hot.

Notes

Use a cast-iron skillet for better heat retention. Serve over zucchini noodles or cauliflower rice for a full keto meal. Always check for sugars in chicken broth.
