Preparation
- Season the chicken breasts with salt, pepper, and Italian herbs.
- In a large skillet, heat the olive oil over medium-high heat.
- Add chicken breasts to the skillet and cook for about 5-6 minutes on each side until golden brown.
- Remove the chicken and set aside, but do not clean the skillet yet.
- Lower the heat to medium and add the butter and minced garlic; sauté for 1-2 minutes until fragrant.
- Pour in the chicken broth, scraping up the browned bits from the bottom of the skillet.
- Let the mixture simmer for about 2-3 minutes to thicken the sauce.
- Return the chicken to the skillet, spooning the garlic butter sauce over each breast, and heat through for another 2-3 minutes.
- Garnish with chopped parsley and serve hot.
Notes
Use a cast-iron skillet for better heat retention. Serve over zucchini noodles or cauliflower rice for a full keto meal. Always check for sugars in chicken broth.
