- Pat the steak bites dry with paper towels and season with salt and pepper.
Cooking
- In a large skillet over medium-high heat, heat the olive oil.
- Add the steak bites to the skillet in a single layer, searing for 1-2 minutes per side until browned.
- Remove the steak from the skillet and set aside.
- Add the butter to the skillet. Once melted, toss in the minced garlic and cook for about 30 seconds until fragrant.
- Add the zucchini and cook for 3-5 minutes, stirring occasionally, until tender-crisp.
- Return the steak bites to the skillet and toss everything together to coat with the garlic butter. Cook for another 1-2 minutes.
- Garnish with fresh parsley if desired and serve.
