Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, combine diced nectarines and sugar; set aside for flavors to meld.
- In another bowl, mix flour, oats, melted butter, vanilla, baking powder, and salt until the mixture is crumbly.
- Press half of the oat mixture into the bottom of a greased or non-stick baking pan.
- Spoon the nectarine mixture over the crust, spreading it evenly.
- Sprinkle the remaining oat mixture on top of the nectarines.
Baking
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool before cutting into bars.
Notes
Use a non-stick pan to make it easier to remove the bars. For serving, sprinkle powdered sugar on top for a touch of elegance. If edges get burned, simply cut them off.
