Ingredients
  

Fruity Nectarine Filling
  • 4 ripe nectarines, pitted and diced Make sure the nectarines are ripe for the best flavor.
  • 1 cup granulated sugar Adjust to taste if desired.
Oat Crust
  • 1/2 cup all-purpose flour Can substitute with gluten-free flour.
  • 1/2 cup rolled oats Use any variety available.
  • 1/2 cup unsalted butter, melted Salted butter can be used, reduce sugar if so.
  • 1 teaspoon vanilla extract Use real vanilla for better flavor.
  • 1/2 teaspoon baking powder Essential for proper texture.
  • 1/4 teaspoon salt Sea salt preferred.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine diced nectarines and sugar; set aside for flavors to meld.
  3. In another bowl, mix flour, oats, melted butter, vanilla, baking powder, and salt until the mixture is crumbly.
  4. Press half of the oat mixture into the bottom of a greased or non-stick baking pan.
  5. Spoon the nectarine mixture over the crust, spreading it evenly.
  6. Sprinkle the remaining oat mixture on top of the nectarines.
Baking
  1. Bake for 30-35 minutes or until the top is golden brown.
  2. Allow to cool before cutting into bars.

Notes

Use a non-stick pan to make it easier to remove the bars. For serving, sprinkle powdered sugar on top for a touch of elegance. If edges get burned, simply cut them off.
