  • 2 slices hearty sandwich bread No large holes
  • 1 large egg
  • 1/2 cup grated cheese (cheddar, pepper jack, or Gruyère) About 2 ounces
  • 1 teaspoon finely chopped fresh herbs (thyme or rosemary)
  • Salt and black pepper to taste
  • Pinch of cayenne (optional)

Method
 

Preparation
  1. Lightly toast your bread in a toaster or broil each side for 1–2 minutes until golden and crisp.
  2. Preheat your oven to 400°F. If using a toaster oven, set it to bake on the bottom rack.
  3. In a small bowl, beat the egg until fully combined. Whisking more will make the egg fluffier.
  4. Stir in the cheese, herbs, salt, and pepper. Mix well.
  5. Spread the mixture to the edges of the toasted bread. Optionally, sprinkle a pinch of cayenne on top.
  6. Bake for 10–12 minutes until puffed and golden, ensuring the cheese melts beautifully and the edges become crispy.

Notes

For leftovers, store in an airtight container in the fridge for 1-2 days. Reheat in the oven or toaster oven, avoid the microwave to prevent sogginess. Customize by swapping cheese or adding chopped veggies for extra flavor.
