  • 2 cups diced watermelon Fresh is best! But frozen works in a pinch.
  • 2 cups diced cucumber English cucumbers preferred for fewer seeds.
  • 1 tablespoon fresh mint leaves, chopped Use more or less according to your taste.
  • 1 tablespoon lime juice Use fresh lime juice; it really makes a difference.
  • Salt to taste Sea salt if you’re fancy, regular salt if not.
  • Pepper to taste Optional; skip if preferred.

Preparation
  1. In a large bowl, combine the diced watermelon and cucumber. Ensure the watermelon is ripe.
  2. Add the chopped mint leaves and lime juice. Adjust the mint to taste.
  3. Season with salt and pepper to taste.
  4. Toss gently to combine all the ingredients.
  5. Chill in the refrigerator for 30 minutes before serving.
  6. Serve and enjoy the refreshing dish!

Notes

This salad is super versatile. Optionally, add crumbled feta for a non-vegan version or grilled zucchini for extra protein. For a fun presentation, serve in a hollowed-out watermelon.
