  • 2 cups strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 2 cups applesauce
  • 1/2 cup sugar Adjust to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon Optional

  1. In a medium pot, combine the strawberries, rhubarb, and sugar. Cook over medium heat until the fruits start to soften.
  2. Keep an eye on the pot to avoid it bubbling over.
  3. Add the applesauce and lemon juice, stir well, and bring to a simmer.
  4. Let it cook for about 10-15 minutes, stirring occasionally.
  5. If desired, stir in the cinnamon for extra flavor.
  6. Remove from heat and let cool. Serve warm or chill in the refrigerator before serving.

Notes

For a smoother texture, blend the finished sauce. This sauce is excellent on ice cream, pancakes, or yogurt. A sturdy spatula and a good stainless steel pot are recommended.
