- Heat olive oil in a skillet over medium-high heat.
- Season the chicken breasts generously with salt and pepper.

- In a bowl, mix lemon juice, lemon zest, and dill.
- Once the chicken is cooked through, pour the lemon dill mixture over the chicken and cook for an additional minute to combine flavors.
- Serve the cooked chicken over sautéed cauliflower rice or with roasted potatoes and your choice of veggies.
Notes
Use a non-stick skillet to minimize sticking. Leftover dill can be added to salads. Don't skip the lemon zest as it enhances the flavor.
