  • 4 pieces boneless, skinless chicken breasts Thighs work too if you're into darker meat.
  • 2 tablespoons olive oil Use quality olive oil for best flavor.
  • 2 pieces lemons Juiced and zested.
  • 2 tablespoons fresh dill Chopped. Dried dill can be used in a pinch.
  • Salt and pepper To taste.
  • Cauliflower rice or roasted potatoes and veggies For serving.

Cooking
  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the chicken breasts generously with salt and pepper.
  3. Add the chicken to the skillet and cook until golden brown, about 5-7 minutes on each side.
  4. In a bowl, mix lemon juice, lemon zest, and dill.
  5. Once the chicken is cooked through, pour the lemon dill mixture over the chicken and cook for an additional minute to combine flavors.
  6. Serve the cooked chicken over sautéed cauliflower rice or with roasted potatoes and your choice of veggies.

Notes

Use a non-stick skillet to minimize sticking. Leftover dill can be added to salads. Don't skip the lemon zest as it enhances the flavor.
