  • 1 tbsp limoncello You can use more if desired.
  • Zest from 2 lemons lemon zest The more zest, the better!
  • 0.5 cup lemon curd Homemade or store-bought.
  • 1.5 cups confectioner’s sugar
  • 2 cups heavy cream Well chilled.
For Assembly
  • 6 cups blueberries Fresh blueberries recommended.
  • 0.5 cup blueberry preserves Adds extra flavor.
  • 1/3 cup limoncello For soaking the cake.
  • Mint leaves Mint leaves For garnish.
  • Sliced lemons Sliced lemons For garnish.

Method
 

Making the Lemon Cake
  1. Preheat your oven to 350°F (175°C).
  2. Mix together flour, sugar, butter, eggs, and lemon zest.
  3. Bake in a preheated oven for about 25-30 minutes, checking for doneness.
Making the Lemon Curd (if homemade)
  1. Whisk eggs, sugar, and lemon juice together until thick, following your recipe.
  2. Alternatively, use store-bought lemon curd.
Making the Filling
  1. In a big mixing bowl, beat softened cream cheese.
  2. Add vanilla, limoncello, lemon zest, and confectioner’s sugar.
  3. Beat in heavy cream until light and fluffy.
