  • 1 pinch salt Use sea salt for a gourmet touch.
  • 1 cup gluten-free flour Any brand is fine as long as it's gluten-free.
  • 1/2 teaspoon cinnamon Adds a cozy flavor.
  • 1/4 cup maple syrup Optional for extra sweetness.
  • 1/2 cup chopped nuts Use walnuts or pecans, optional.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Stir in melted coconut oil and vanilla extract.
  4. Mix in baking soda and salt.
  5. Add gluten-free flour and cinnamon, and mix until combined.
  6. If desired, fold in chopped nuts.
  7. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool before slicing to avoid mess.

Notes
