Preparation
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, mash the ripe bananas until smooth.
- Stir in melted coconut oil and vanilla extract.
- Mix in baking soda and salt.
- Add gluten-free flour and cinnamon, and mix until combined.
- If desired, fold in chopped nuts.
- Pour the batter into the prepared loaf pan.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing to avoid mess.
