  • 4 medium Beets Fresh, whole beets
  • 1 cup Vinegar Any type of vinegar; apple cider vinegar can work for a sweeter taste
  • 1 cup Water For the pickling brine
  • 1 cup Sugar Adjust based on vinegar type
  • 1 tablespoon Salt To taste
  • 2 teaspoons Spices (e.g., mustard seeds, coriander seeds) Add to taste

Method
 

Preparation
  1. Start by boiling the beets in water until they are tender, about 30-45 minutes.
  2. Once cooked, peel the beets and cut them into slices or quarters.
Pickling
  1. In a pot, combine equal parts vinegar and water, add sugar, salt, and spices to taste.
  2. Bring the mixture to a boil, then remove it from heat.
Jarring
  1. Place the beets in sterilized jars and pour the pickling liquid over them, ensuring they are fully submerged.
  2. Seal the jars and allow them to cool, then refrigerate for at least 24 hours before serving.

Notes

Make sure to sterilize your jars before using them. Experiment with spices for added flavor. They can last about a month in the fridge if stored properly.
