  • 1 cup strawberries, hulled and sliced Fresh and sweet strawberries are essential for this salad.
  • 1 large English cucumber (or 3 Persian cucumbers), thinly sliced Cucumber adds a crunchy texture.
  • 1/4 cup crumbled feta or goat cheese Optional, for extra flavor.
  • 2 tbsp chopped fresh mint or basil Fresh herbs elevate the flavor.
  • 2 tbsp slivered almonds, sunflower seeds, or walnuts Toasted nuts/seeds are optional but add a nice crunch.
Dressing Ingredients
  • 1 tbsp fresh lemon juice or balsamic vinegar Either adds a nice tang.
  • 1 tsp honey or maple syrup Adds a touch of sweetness.
  • 2 tbsp olive oil Don't skimp on quality!
  • to taste salt and black pepper Enhances all flavors.

Method
 

Preparation
  1. Start by washing and drying the strawberries and cucumbers. Hull and slice the strawberries, then slice the cucumber into rounds or half-moons.
Mix Dressing
  1. In a small bowl or jar, whisk together lemon juice (or balsamic), honey (or maple syrup), olive oil, salt, and pepper. Taste and adjust if needed.
Assemble Salad
  1. In a large mixing bowl, toss together cucumbers, strawberries, herbs, and cheese if using.
Toss Lightly
  1. Drizzle with half of the dressing and gently toss to coat, being careful not to crush the fruit.
Garnish & Serve
  1. Transfer the salad to a serving platter, sprinkle with nuts/seeds and additional herbs, then drizzle with the remaining dressing. Serve immediately.

Notes

For best flavor, chill the salad in the fridge for about 15 minutes before serving. This salad pairs well with grilled chicken or fish and is perfect for picnics.
