Preparation
- Start by washing and drying the strawberries and cucumbers. Hull and slice the strawberries, then slice the cucumber into rounds or half-moons.
Mix Dressing
- In a small bowl or jar, whisk together lemon juice (or balsamic), honey (or maple syrup), olive oil, salt, and pepper. Taste and adjust if needed.
Assemble Salad
- In a large mixing bowl, toss together cucumbers, strawberries, herbs, and cheese if using.
Toss Lightly
- Drizzle with half of the dressing and gently toss to coat, being careful not to crush the fruit.
Garnish & Serve
- Transfer the salad to a serving platter, sprinkle with nuts/seeds and additional herbs, then drizzle with the remaining dressing. Serve immediately.
Notes
For best flavor, chill the salad in the fridge for about 15 minutes before serving. This salad pairs well with grilled chicken or fish and is perfect for picnics.
