  • 2 lbs boneless skinless chicken breasts
  • 2 cups heavy cream (or half and half) Use half and half for a lighter option.
  • 1 cup grated parmesan cheese Fresh is preferable but pre-grated is convenient.
  • 1 cup chicken broth Homemade is great; store-bought works.
  • 8 oz cream cheese, cubed Low-fat version can be used.
  • 6 cloves garlic, minced Don't skimp on garlic.
  • 1 tsp Italian seasoning
  • 12 oz penne pasta, uncooked Any pasta shape will work.
  • 2 tbsp unsalted butter
  • Salt and black pepper to taste Use sea salt for best flavor.
  • 2 tbsp chopped fresh parsley For garnish.

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Season both sides with salt, black pepper, and Italian seasoning.
  3. Add minced garlic, cubed cream cheese, butter, chicken broth, and heavy cream over the chicken.
Cooking
  1. Cover and cook on low for about 4 hours, or until the chicken is tender.
  2. Remove the chicken from the crockpot and shred it using two forks.
  3. Stir in the grated parmesan cheese.
  4. Add uncooked penne pasta to the crockpot and stir well.
  5. Cover again and cook on high for 20-30 minutes, or until the pasta is tender, stirring occasionally.
Serving
  1. Serve hot, garnished with chopped fresh parsley and more parmesan.

Notes

Type of crockpot affects cooking time; consider adding veggies such as spinach for variation. If garlic burns, add more cream cheese or parmesan to salvage the dish.
