Preparation
- Season the chicken breasts with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken breasts and cook for about 5-6 minutes per side until golden brown.
- Remove the chicken from the skillet and set aside.
Making the Sauce
- In the same skillet, sauté minced garlic for about a minute until fragrant.
- Reduce heat to medium and add heavy cream, stirring in basil pesto and grated Parmesan cheese.
- Let the sauce simmer for about 2-3 minutes to thicken slightly.
Combine and Serve
- Return the cooked chicken to the skillet and spoon the creamy sauce over it.
- Add the cherry tomatoes and let everything simmer together for another 2-3 minutes.
- Garnish with fresh basil leaves and serve hot.
