Preparation
- Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
- In a large bowl, mix together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and pepper.
- Once cooled, gently fold the potatoes into the dressing. Add in the crumbled bacon, shredded cheddar cheese, and chopped green onions.
- Mix everything well until all ingredients are coated.
- Cover the bowl and chill in the refrigerator for at least one hour before serving.
Notes
For a healthier twist, swap half of the mayonnaise for Greek yogurt. You can also add hot sauce or jalapeños for a spicy kick.
