  • 1 pound Gnocchi Store-bought is convenient.
  • 2 cups Fresh Spinach About a couple of handfuls.
  • 1 cup Feta Cheese, crumbled Mixes better when crumbled.
  • 2 cloves Garlic, minced Fresh is best for flavor.
  • 2 tablespoons Olive Oil Extra virgin for a touch of luxury.
  • 1 cup Heavy Cream Essential for creaminess.
  • to taste tsp Salt Use sea salt for a fancier taste.
  • to taste tsp Black Pepper, freshly ground Important for flavor.
  • optional cup Parmesan Cheese, grated For serving, if desired.

Method
 

Preparation
  1. Boil a pot of salty water. Cook the gnocchi according to the package directions, usually until they float. Drain and save a cup of pasta water.
  2. Heat a skillet over medium heat. Add olive oil, then minced garlic. Sauté until fragrant, being careful not to burn it.
  3. Add fresh spinach to the skillet and cook until it wilts down.
  4. Pour in the heavy cream and bring to a gentle simmer.
  5. Stir in the crumbled feta cheese and season with salt and black pepper.
  6. Gently mix in the cooked gnocchi and stir to combine without breaking the gnocchi.
  7. Serve warm, topped with grated Parmesan if desired.

Notes

For a thicker sauce, add a splash of reserved pasta water. Fresh spinach significantly improves taste. Optionally, bake with breadcrumbs and cheese for a crunchy topping.
