Preparation
- Slice chicken breasts in half horizontally or pound to even thickness. Season with salt, pepper, and Italian seasoning.
Cooking
- Heat olive oil in a skillet over medium heat. Sear the chicken until golden and cooked through, about 4–5 minutes per side.
- Remove the chicken from the skillet and set it aside.
- Lower the heat, then add butter and garlic to the skillet, sautéing until fragrant, about 1 minute.
- Pour in the cream and stir to deglaze the pan, then add the Parmesan cheese and let it simmer until thickened.
- Return the chicken to the skillet, simmer for 2–3 minutes to heat through and coat with the sauce.
Notes
Rest the chicken after cooking for a few minutes before slicing. For a spicier kick, add some red pepper flakes to the sauce. Refrigerate leftovers in an airtight container for up to three days.
