Ingredients
  

For the chicken
  • 2 large boneless, skinless chicken breasts Can be sliced horizontally or pounded to even thickness.
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced Pre-minced garlic can be used for convenience.
  • 1 cup heavy cream Half-and-half can substitute, but will be less rich.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and black pepper
  • to taste Fresh chopped parsley for garnish (optional)

Method
 

Preparation
  1. Slice chicken breasts in half horizontally or pound to even thickness. Season with salt, pepper, and Italian seasoning.
Cooking
  1. Heat olive oil in a skillet over medium heat. Sear the chicken until golden and cooked through, about 4–5 minutes per side.
  2. Remove the chicken from the skillet and set it aside.
  3. Lower the heat, then add butter and garlic to the skillet, sautéing until fragrant, about 1 minute.
  4. Pour in the cream and stir to deglaze the pan, then add the Parmesan cheese and let it simmer until thickened.
  5. Return the chicken to the skillet, simmer for 2–3 minutes to heat through and coat with the sauce.

Notes

Rest the chicken after cooking for a few minutes before slicing. For a spicier kick, add some red pepper flakes to the sauce. Refrigerate leftovers in an airtight container for up to three days.
