  • 2/3 cup chia seeds These seeds expand and thicken the pudding.
  • 1/2 cup cocoa powder Use unsweetened, Ghirardelli or similar recommended.
  • 1/3 cup pure maple syrup Can substitute with raw honey.
  • 1 tsp pure vanilla extract Essential for flavor.
  • 1/2 tsp Himalayan pink salt Enhances the flavors. Sea salt can also be used.

Preparation
  1. Add all of the ingredients to a high-speed blender: cold water (or milk), chia seeds, cocoa powder, maple syrup, vanilla, and salt.
  2. Blend until smooth and creamy, scraping down the sides as needed to ensure everything is well mixed.
  3. Check the texture—if it's too thick, add a splash more liquid for consistency.
Chill
  1. Pour the mixture into a bowl or individual serving cups and cover with plastic wrap or a lid.
  2. Chill in the fridge for at least 4 hours, but overnight is best for the right texture.
Serve
  1. Serve the pudding as-is or add toppings like fresh berries, nut butter, or nuts.

Consistency is key; adjust liquid if too thick. The quality of your blender impacts texture significantly, so use a high-speed blender for best results. This pudding can also be enjoyed for breakfast.
