  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced You can substitute with broccoli if desired.
  • 1/2 cup bell pepper, diced Adds a nice crunch.
  • 1/4 cup red onion, finely chopped
  • 1/2 cup creamy dressing (ranch or mayonnaise) Adjust based on your preference.

Preparation
  1. In a large bowl, combine the cooked pasta, shredded chicken, cherry tomatoes, cucumber, bell pepper, and red onion.
  2. Add the creamy dressing and mix until everything’s well coated, being careful not to overdo it on the dressing.
  3. Season with salt and pepper to taste.
  4. Chill in the refrigerator for about 30 minutes before serving to allow the flavors to meld.
