Preparation
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 30 seconds.
- Season the chicken breasts with salt, pepper, and Italian seasoning, and sear them in the skillet for about 4-5 minutes on each side until golden brown.
- Add the cherry tomatoes and fresh spinach to the skillet.
- Sprinkle the grated Parmesan cheese over the mixture.
- Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C).
Serving
- Let cool for a minute before serving. Serve with crusty bread and enjoy with wine or sparkling water.
Notes
If you have leftovers, let them cool completely before transferring to an airtight container. Store in the fridge for 3-4 days or in the freezer for 2-3 months.
