  • 2 pieces boneless, skinless chicken breasts (or turkey if you’re feeling adventurous)
  • 1 cup cottage cheese (low-fat recommended)
  • 1 cup marinara sauce (homemade or store-bought)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or to taste)
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tablespoon cooking oil (olive oil recommended)
  • 1 sprig fresh basil (optional for garnish)

Preparation
  1. Preheat the oven to 375°F (190°C) and grab a baking dish.
  2. Season the chicken with salt, pepper, and Italian seasoning on both sides.
  3. Heat oil in a large skillet over medium heat until hot.
  4. Cook the chicken for about 5-6 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and let it rest on a cutting board.
  6. In a bowl, mix together the cottage cheese, half of the mozzarella, and half of the Parmesan.
  7. Stir in the marinara sauce, using just enough to mix everything together.
  8. Slice the chicken into strips or cubes.
  9. In the baking dish, layer half of the marinara-cottage cheese mixture, followed by the sliced chicken, then pour the rest of the mixture on top.
  10. Top with the remaining mozzarella and Parmesan cheese.
Baking
  1. Bake for about 25-30 minutes, until the cheese is bubbly and golden.
  2. Garnish with fresh basil, if desired, and serve.

Notes

Serve with a side salad or garlic bread for a complete meal. Remember, patience in cooking makes a difference in flavor!
