Preparation
- Preheat the oven to 375°F (190°C) and grab a baking dish.
- Season the chicken with salt, pepper, and Italian seasoning on both sides.
- Heat oil in a large skillet over medium heat until hot.
- Cook the chicken for about 5-6 minutes on each side until golden brown.
- Remove the chicken from the skillet and let it rest on a cutting board.
- In a bowl, mix together the cottage cheese, half of the mozzarella, and half of the Parmesan.
- Stir in the marinara sauce, using just enough to mix everything together.
- Slice the chicken into strips or cubes.
- In the baking dish, layer half of the marinara-cottage cheese mixture, followed by the sliced chicken, then pour the rest of the mixture on top.
- Top with the remaining mozzarella and Parmesan cheese.
Baking
- Bake for about 25-30 minutes, until the cheese is bubbly and golden.
- Garnish with fresh basil, if desired, and serve.
