Preparation
- Preheat your oven to 350°F (175°C).
- Grease an 8x8 inch baking pan.
- Spread the cookie dough evenly in the bottom of the pan.
Make the Cheesecake Filling
- In a mixing bowl, beat together cream cheese and sugar until smooth.
- Add in vanilla and egg, mixing until fully incorporated.
- Stir in sour cream and flour until no flour streaks remain.
- Fold in chocolate chips if desired.
Bake
- Pour the cheesecake mixture over the cookie dough layer.
- Bake for 25-30 minutes, or until the center is set.
- Allow to cool, then refrigerate for at least 2 hours before slicing into bars.
Notes
Use a long knife for cutting. These bars pair beautifully with vanilla ice cream or fresh berries.
