Preparation
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, combine the melted butter, brown sugar, and white sugar. Mix well, ensuring the butter isn't too hot.
- Add the eggs and vanilla extract to the mixture, stirring until combined.
- In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped rhubarb.
- Pour the batter into the prepared loaf pan.
Baking
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring it to a wire rack.

- Serve warm with butter or a light glaze.
Notes
Don't skip the resting time after baking! Chop rhubarb into smaller pieces for more flavor. Experiment with adding nuts or chocolate chips.
