Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar Can be substituted with white sugar.
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 large egg
  • Powdered sugar for coating Use generously for a beautiful finish.

Method
 

Preparation
  1. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  2. In another bowl, mix granulated sugar, brown sugar, oil, and vanilla until smooth and creamy.
  3. Add the egg and mix until smooth to create a velvety batter.
  4. Gradually add the dry ingredients to the wet ingredients, stirring to combine.
  5. Chill the dough for at least 30 minutes.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Roll the chilled dough into balls and coat them in powdered sugar.
  3. Place the balls on a baking sheet lined with parchment paper.
  4. Bake for 10-12 minutes, until they are set and crinkled on top.
  5. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For softer cookies, take them out of the oven on the earlier side of the baking time. Experiment by adding a pinch of espresso powder for added depth of flavor.
