Preparation
- In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, mix granulated sugar, brown sugar, oil, and vanilla until smooth and creamy.
- Add the egg and mix until smooth to create a velvety batter.
- Gradually add the dry ingredients to the wet ingredients, stirring to combine.
- Chill the dough for at least 30 minutes.
Baking
- Preheat the oven to 350°F (175°C).
- Roll the chilled dough into balls and coat them in powdered sugar.
- Place the balls on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, until they are set and crinkled on top.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For softer cookies, take them out of the oven on the earlier side of the baking time. Experiment by adding a pinch of espresso powder for added depth of flavor.
