Ingredients
  

For the Brownie Layer
  • 1/2 cup unsalted butter Melted
  • 1/2 cup dark brown sugar Packed
  • 1/2 cup granulated sugar
  • 2 large eggs Room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup all-purpose flour Spoon and leveled
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 3.5 oz 70% cocoa chocolate bar (chopped) I used Lindt
For the Cookie Layer
  • 6 tablespoons unsalted butter Softened
  • 1/3 cup dark brown sugar Packed
  • 1/4 cup granulated sugar
  • 1 large egg Room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour Spoon and leveled
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips Plus more for sprinkling on top
  • Flaky sea salt (optional) For topping

Method
 

Make the Brownie Batter
  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan over low heat, melt the 1/2 cup of butter.
  3. In a separate bowl, mix together the dark brown sugar and granulated sugar until combined.
  4. Remove the pan from heat, add the eggs one at a time, mixing after each addition. Stir in the vanilla extract.
  5. In a bowl, whisk together the flour, cocoa powder, and salt. Slowly add this dry mix into the wet ingredients and mix until just combined. Fold in the chopped chocolate.
Make the Cookie Dough
  1. In a separate bowl, beat together the 6 tablespoons of softened butter with both sugars until creamy.
  2. Add the egg and vanilla extract and mix until smooth.
  3. Combine flour, cornstarch, baking soda, and salt in another bowl. Slowly mix this into the buttery sugar mixture and then fold in the semi-sweet chocolate chips.
Layering Time
  1. Grease an 8x8 inch baking dish.
  2. Pour the brownie batter into the dish and spread it evenly. Gently spoon the cookie dough on top.
  3. Sprinkle extra chocolate chips on top and add flaky sea salt if desired.
Bake
  1. Bake in the preheated oven for about 25-30 minutes. The edges should be set, and the center should still look soft.
  2. Let it cool completely before cutting into squares.

Notes

Using parchment paper can help with easy removal from the pan. These brownies go great with vanilla ice cream!
