- In a bowl, mix together lime juice, honey, chili powder, garlic powder, salt, and pepper until well combined.
- Add chicken thighs to the marinade, ensuring they are fully covered, and refrigerate for at least 30 minutes (1 hour preferred).
Cooking
- Preheat oven to 375°F (190°C).
- Heat a skillet over medium-high heat and sear marinated chicken thighs for about 4-5 minutes on each side until browned.
- Transfer chicken to a baking dish and pour reserved marinade over the top.
- Bake in the preheated oven for 25-30 minutes, monitoring to avoid overcooking.
- Remove from the oven and brush the chicken with the marinade glaze before serving.
Notes
Marinating overnight enhances the flavor. Use a thermometer to ensure chicken is cooked to 165°F (74°C). Leftover marinade can be used in a salad or stir-fry.
