- In a large pot, heat a bit of oil over medium heat.
- Add chopped onion and garlic, and cook until softened and fragrant.
- Stir in chili powder and cumin, cooking for another minute to let those spices bloom.
- Add shredded chicken, corn, black beans, diced tomatoes, and chicken broth.
- Bring to a boil, then reduce heat to let it simmer for about 10-15 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with tortilla strips and lime wedges.
Notes
Don't skip the spices! For an extra kick, add jalapeños or cayenne pepper. For a thicker soup, blend a cup of the soup and then return it to the pot.
