Main ingredients
  • 4 pieces boneless, skinless chicken breasts You can use thighs if preferred.
  • 8 oz fresh mushrooms, sliced Button mushrooms can be used if baby bellas are unavailable.
  • 4 cups fresh spinach Use more if desired.
  • 1 cup heavy cream Full-fat cream recommended.
  • 1/2 cup grated Parmesan cheese Essential for the dish.
  • 2 cloves garlic, minced Pre-minced garlic is convenient.
  • 1 tsp Italian seasoning Adjust to taste.
  • Salt to taste Salt and pepper Regular salt works.
  • 1 tbsp olive oil Use extra virgin for extra flavor.

Method
 

Preheat the Oven
  1. Preheat your oven to 375°F (190°C).
Sauté the Vegetables
  1. In a pan, heat 1 tablespoon of olive oil over medium heat.
  2. Add the sliced mushrooms and sauté until they’re golden and tender, about 5-7 minutes.
  3. Add the minced garlic and cook for another minute, being careful not to burn it.
Add the Spinach
  1. Toss in the fresh spinach and sauté until soft, about 2-3 minutes.
Prepare the Creamy Mixture
  1. In a bowl, mix together the heavy cream, Italian seasoning, and generous sprinkles of salt and pepper.
  2. Stir in the sautéed mushrooms and spinach.
Prepare the Chicken
  1. In a baking dish, arrange the chicken breasts.
  2. Pour the creamy mushroom and spinach mixture over the top.
Cheesy Love
  1. Sprinkle the grated Parmesan cheese over the entire dish.
Bake Away
  1. Bake in the oven for 30-35 minutes, or until the chicken is cooked through and the top is golden.

Notes

Good quality chicken makes a difference. Don’t skimp on the seasoning for best results. Serve immediately as the dish is more delicious when hot.
