Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts Grab the ones on sale if possible.
  • to taste salt Sea salt if you're fancy.
  • to taste pepper
  • 2 tablespoons olive oil Extra virgin is preferred for flavor.
  • 1/4 cup all-purpose flour For dusting the chicken.
For the Sauce
  • 2 cloves garlic, minced Can add more if desired.
  • 1/2 cup chicken broth Use low-sodium if necessary.
  • 1 piece lemon, juiced Fresh juice is best.
  • 2 tablespoons capers Adds a zesty flavor.
For Serving
  • fresh parsley For garnish.

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper.
  2. Lightly dust the chicken with flour.
Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken breasts and cook until golden brown, about 4-5 minutes each side.
  3. Remove the chicken and set it aside.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds.
  5. Pour in chicken broth and lemon juice, scraping up any brown bits from the pan.
  6. Add capers and return the chicken to the skillet. Let it simmer for 2-3 minutes.
Serving
  1. Garnish with fresh parsley and serve over a bed of pasta or with a side of veggies.

Notes

Use a good skillet for better results. You can skip the capers if you're not a fan, and adding lemon zest can enhance the flavor significantly. Serve with crusty bread to soak up the sauce.
