- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the eggs and cottage cheese until combined.
- Stir in the shredded cheese and diced vegetables. Season with salt and pepper.
- Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes or until the egg bites are set and lightly golden on top.
- Let them cool slightly before removing from the tin. Serve warm or store in the fridge.
Notes
Use a non-stick muffin tin for easier removal. Consider adding spices for extra flavor. These bites are great served with avocado slices or salsa.
