Cheesy Ground Beef and Potatoes

Ingredients
  

Main ingredients
  • 1 lb ground beef Lean or ground chuck can be used.
  • 4 medium russet potatoes, peeled and thinly sliced Use a mandoline for easier slicing.
  • 1 medium onion, diced Onions may cause tears!
  • 2 cups shredded cheddar cheese More cheese is always better!
  • 1 cup milk Whole or 2% recommended.
  • 2 tablespoons unsalted butter Using unsalted butter enhances flavor.
  • 1 teaspoon garlic powder Don't skimp on the garlic!
  • 1 teaspoon salt Regular or sea salt as preferred.
  • 1/2 teaspoon black pepper Freshly ground is preferred.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft (7-10 minutes). Drain excess fat.
  3. Stir in garlic powder, salt, and black pepper and mix well.
  4. Remove from heat and let it cool slightly.
Layering
  1. Layer half of the sliced potatoes in the prepared baking dish.
  2. Top with half of the beef mixture and 1 cup of shredded cheddar cheese.
  3. Repeat with the remaining potatoes, beef mixture, and cheese.
Baking
  1. In a small saucepan, heat the milk and butter until the butter is melted.
  2. Pour the milk mixture evenly over the casserole.
  3. Cover with foil and bake for 30 minutes.
  4. Remove the foil and bake for an additional 15 minutes, until potatoes are tender and cheese is bubbly.
  5. Let it stand for about 5 minutes before serving.

Notes

Consider adding green onions or bacon bits on top just before serving. Pair with a salad or steamed veggies.
