  • 4 medium Carrots The fresher the better, ideally organic.
  • 2 tablespoons Olive oil Extra virgin if you prefer quality.
  • 1 tablespoon Lemon juice Freshly squeezed for best flavor.
  • 1 tablespoon Honey Local raw honey is preferred.
  • 1 pinch Salt Sea salt for a fancy touch, regular salt if preferred.
  • 1 pinch Pepper Freshly cracked if possible.
  • 1/4 cup Fresh herbs (like parsley or cilantro) Used for garnish.

Method
 

Preparation
  1. Using a vegetable peeler, slice the carrots into thin ribbons.
  2. In a large bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to prepare the dressing.
  3. Toss the carrot ribbons in the bowl until well-coated with the dressing.
  4. Sprinkle fresh herbs over the salad for garnish.
  5. Let the salad sit for a few minutes to allow the flavors to meld.

Notes

Serve cold and feel free to add nuts or dried cranberries for extra flavor and texture. This salad pairs well with grilled chicken or fish.
