- Brown the beef in a large skillet over medium heat, draining excess fat while leaving some for flavor.
- Add the chopped onion and bell pepper; cook for 3-4 minutes until softened.
- Stir in the chopped cabbage and diced tomatoes, followed by the seasonings. Cover and cook for 20-25 minutes, stirring occasionally, until the cabbage is wilted but still crunchy.
- Taste and adjust seasoning if necessary.
- Sprinkle cheddar cheese on top, cover again and cook until cheese is melty.
- Serve immediately, optionally with a side of rice for those not on a keto diet.
Notes
Using a good-quality non-stick skillet helps with cleanup. Pre-chopped cabbage can save time. This dish pairs well with a side salad, and leftovers are often more flavorful.
