Ingredients
  

Filling
  • 4-5 pieces ripe nectarines, sliced The riper, the better. Just avoid those hard-as-a-rock ones.
  • 1 tablespoon lemon juice Fresh if possible.
Topping
  • 1 cup rolled oats Any brand will do.
  • 1/2 cup all-purpose flour Gluten-free flour could work.
  • 1/2 cup brown sugar Make sure it’s packed.
  • 1/3 cup butter, melted Butter makes everything better.
  • 1 teaspoon cinnamon Essential spice.
  • 1/4 teaspoon salt Sea salt if you’re fancy.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine sliced nectarines and lemon juice.
  3. In another bowl, mix rolled oats, flour, brown sugar, cinnamon, and salt.
  4. Pour in the melted butter and stir until crumbly.
  5. Spread nectarines in a baking dish and sprinkle the oat mixture on top.
Baking
  1. Bake for 30-35 minutes or until the top is golden brown and the nectarines are bubbly.
  2. Serve warm, optionally with ice cream.

Notes

You can add walnuts or sliced almonds for crunch. Blueberries can add a nice tartness. Cleanup is easier if you use parchment paper.
