Ingredients
  

For the Cookie Mixture
  • 1 cup unsalted butter, softened Microwave for 10 seconds to soften.
  • 1 cup brown sugar, packed Adds chewiness to the cookies.
  • 1/2 cup granulated sugar Regular sugar is fine.
  • 1 large egg egg For binding the cookies.
  • 1 teaspoon vanilla extract Add a splash extra if desired.
  • 2 cups all-purpose flour Regular flour works best.
  • 1 teaspoon baking soda Key for fluffiness.
  • 1/2 teaspoon salt Sea salt or regular salt is fine.
  • 1 cup chopped pecans Pecans are the star ingredient.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Fold in the chopped pecans.
Baking
  1. Drop spoonfuls of cookie dough onto ungreased baking sheets, spacing them out.
  2. Bake for 10-12 minutes, or until the edges are lightly golden.
  3. Allow to cool slightly on the baking sheets, before transferring to wire racks to cool completely.

Notes

Using non-stick baking sheets will prevent sticking. These cookies pair great with milk or coffee. For an extra flavor kick, consider adding a pinch of cinnamon.
