  • 0.5 cups 1/2 cup granulated sugar This is for the crust.
  • 0.5 cups 1/2 cup unsalted butter, melted Using unsalted butter allows better control over saltiness.
  • 1/4 tsp 1/4 tsp salt Salt enhances the flavor.
For the Cheesecake Filling
  • 8 oz 8 oz cream cheese, softened Philadelphia brand is recommended.
  • 0.5 cups 1/2 cup granulated sugar This is for the cheesecake filling.
  • 1 large 1 large egg Eggs add richness.
  • 1 tsp 1 tsp vanilla extract Use real vanilla for best flavor.
For the Blueberry Topping
  • 2 cups 2 cups fresh blueberries Fresh blueberries are preferred over frozen.
  • 2 tbsp 2 tbsp cornstarch Helps thicken the blueberry filling.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, mix together the flour, 1/2 cup sugar, melted butter, and salt until crumbly.
Crust Assembly
  1. Press two-thirds of the crumb mixture into the bottom of the prepared pan.
Cheesecake Filling
  1. In a different bowl, beat the softened cream cheese, remaining 1/2 cup sugar, egg, and vanilla extract until smooth.
  2. Spread the cheesecake mixture evenly over the crust.
Blueberry Topping
  1. Toss the blueberries with cornstarch in another bowl, then sprinkle evenly over the cheesecake layer.
  2. Crumble the remaining flour mixture over the blueberries.
Baking
  1. Bake for about 40 minutes, or until the top is golden and slightly crispy.
  2. Cool completely before slicing into bars, allowing about an hour for cooling.
