Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash the ripe bananas.
- Stir in the coconut oil and sour cream until well combined.
- Add in the sugar, eggs, and vanilla extract, and mix until smooth.
- In a separate bowl, whisk together the whole wheat flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the blueberries.
- Pour the batter into the prepared loaf pan and level the batter.
Baking
- Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For the best texture, avoid overmixing the batter. Tossing blueberries in a little flour before adding helps prevent sinking.
