For the Pie
  • 1 pre-made pie crust 1 pre-made pie crust Using a pre-made crust saves time.
  • 2 cups 2 cups fresh strawberries, hulled and halved Fresh strawberries are recommended for best flavor.
  • 1 cup 1 cup granulated sugar Adjust sweetness based on strawberry ripeness.
  • 3 tablespoons 3 tablespoons cornstarch Thickens the glaze; add more for a thicker sauce.
  • 1 tablespoon 1 tablespoon lemon juice Adds acidity to balance the sweetness.
  • 1/4 cup 1/4 cup water Used to make the glaze.
  • 1 cup 1 cup whipped cream For topping the pie before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Bake the pie crust according to package directions until golden brown. Let it cool.
  3. In a saucepan, combine the sugar, cornstarch, lemon juice, and water. Cook over medium heat until the mixture thickens and starts to boil.
  4. Remove from heat and let it cool slightly until warm but not hot.
  5. Stir in the fresh strawberries, coating them in the glaze.
  6. Pour the strawberry mixture into the cooled pie crust.
  7. Chill the pie in the refrigerator for at least two hours to set.
  8. Before serving, top with whipped cream.

Notes

Store leftovers in the refrigerator covered with plastic wrap for up to 3-4 days; do not freeze.
