Main Ingredients
  • 2 pounds chuck beef, cut into chunks Chuck beef gets tender when cooked.
  • 4 pieces carrots, sliced Kids usually love this ingredient.
  • 4 pieces potatoes, diced (Yukon Gold preferred) For creamy texture.
  • 1 piece onion, chopped Onions can cause tears!
  • 3 cloves garlic, minced Add more if you love garlic.
  • 4 cups beef broth Homemade is ideal, but store-bought works.
  • 2 tablespoons Italian seasoning Feel free to substitute with your favorite herbs.
  • to taste salt and pepper Use sea salt for a fancy touch.
  • 2 tablespoons olive oil Use good quality olive oil.

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat until hot.
  2. Add the chunks of chuck beef to the pot. Brown them on all sides, usually in batches.
  3. Once the beef is browned, add the chopped onions and minced garlic. Sauté until onions are translucent.
  4. Stir in the sliced carrots, diced potatoes, and Italian herbs until well mixed.
  5. Pour in the beef broth and bring to a boil.
  6. Reduce the heat, cover, and let it simmer for about 1.5 to 2 hours.
  7. Before serving, season with salt and pepper to taste.

Notes

A dutch oven is recommended for the best flavor. Serve with fresh herbs and enjoy with crusty bread for a complete meal.
