  • 2 pounds beef chuck, cut into cubes Ensure beef is cut into even cubes for uniform cooking.
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat the oven to 325°F (165°C).
  2. In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides.
  3. Remove the beef and set it aside. In the same pot, add the onions and garlic, cooking until softened.
  4. Stir in the tomato paste, thyme, and bay leaf. Let it cook for a minute.
Cooking
  1. Return the beef to the pot and add the broth, carrots, and potatoes. Stir well.
  2. Bring to a simmer, then cover and transfer the pot to the preheated oven.
  3. Cook for 2-3 hours, or until the beef is tender.
  4. Remove the bay leaf, season with salt and pepper, and serve hot.

Notes

Serve with crusty bread, rice, or salad. A sprinkle of fresh parsley adds color.
