Preparation
- Preheat the oven to 325°F (165°C).
- In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides.
- Remove the beef and set it aside. In the same pot, add the onions and garlic, cooking until softened.
- Stir in the tomato paste, thyme, and bay leaf. Let it cook for a minute.
Cooking
- Return the beef to the pot and add the broth, carrots, and potatoes. Stir well.
- Bring to a simmer, then cover and transfer the pot to the preheated oven.
- Cook for 2-3 hours, or until the beef is tender.
- Remove the bay leaf, season with salt and pepper, and serve hot.
Notes
Serve with crusty bread, rice, or salad. A sprinkle of fresh parsley adds color.
