  • 3-4 lbs beef chuck roast Choose the juiciest piece.
  • 2 tablespoons olive oil Extra virgin recommended.
  • 1 large onion, chopped Adds flavor.
  • 4 cloves garlic, minced Enhances taste.
  • 4 cups beef broth Homemade preferred or use cans.
  • 4 medium carrots, sliced Baby carrots can be substituted.
  • 4 medium potatoes, quartered Great addition.
  • 2 sprigs fresh rosemary Fresh is best.
  • 2 sprigs fresh thyme Dried can be used if necessary.
  • Salt and pepper to taste Use sea salt for a fancy touch.

Method
 

Preparation
  1. Preheat the oven to 325°F (165°C).
  2. In a large oven-safe pot, heat olive oil over medium-high heat.
  3. Season the beef roast with salt and pepper, then sear on all sides until browned.
  4. Remove the roast and set aside.
  5. In the same pot, add chopped onion and garlic; cook until softened.
Cooking
  1. Return the beef to the pot, add broth, carrots, potatoes, rosemary, and thyme.
  2. Bring to a simmer, then cover and transfer to the preheated oven.
  3. Cook for 3-4 hours until the beef is tender.
Serving
  1. Remove from oven, let rest, slice, and serve with the vegetables.

Notes

Allow resting time for better flavor. Red wine can be added for enhanced taste. For serving, consider turning leftovers into a sandwich with crusty bread.
