  • 1/4 cup chia seeds Avoid substituting with flax seeds.
  • 2 cups milk Dairy or non-dairy as per preference; almond milk was used.
  • 2 tablespoons honey Use local honey for best flavor.
  • 1 teaspoon vanilla extract Imitation vanilla is acceptable.
  • 1 pinch salt Use sea salt for a classy touch.

Preparation
  1. In a bowl, mash the bananas until smooth.
  2. Add the chia seeds, milk, honey, vanilla extract, and salt to the mashed bananas and mix well.
  3. Let the mixture sit for about 5-10 minutes.
  4. Pour the mixture into serving cups or bowls.
  5. Refrigerate for at least 2 hours or until set.
  6. Serve chilled and enjoy, possibly topped with chopped nuts or a sprinkle of cinnamon.

Notes

Use a good mixing bowl to avoid mess. This pudding can also be used as a smoothie base. Consider topping with fresh fruit or granola.
