  • 1 bunch asparagus Good vegetable choice for kids
  • 4 tablespoons butter Use good quality, preferably grass-fed
  • 4 cloves garlic, minced Fresh garlic is preferred over pre-minced
  • 1 piece lemon, sliced Zest is important
  • to taste salt and pepper Use sea salt for a fancier option
  • to taste fresh herbs (dill or parsley) For garnish

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Prepare a large piece of foil and place the salmon fillets in the center.
  3. Arrange the asparagus around the salmon.
  4. In a small bowl, melt the butter and mix in the minced garlic.
  5. Drizzle the garlic butter over the salmon and asparagus.
  6. Season with salt, pepper, and lay lemon slices on top.
  7. Fold the foil to create a tightly sealed packet.
  8. Place the foil packet on a baking sheet and bake for about 15-20 minutes.
  9. Carefully open the foil packet and serve with fresh herbs.

Notes

Use heavy-duty foil for best results. A garlic press can save time when mincing garlic. If salmon isn't flaking after 20 minutes, add a couple more minutes to the cook time. Pairs well with rice or salad.
