Ingredients
  

Main Ingredients
  • 2 cups fresh rhubarb, chopped Rhubarb can be a bit tricky to find sometimes. If you can grab some from a farmer's market, even better!
  • 1 cup all-purpose flour Nothing fancy here. I just use the generic brand.
  • 1/2 cup sugar You can do half brown sugar if you're feeling funky.
  • 1 teaspoon baking powder This is essential.
  • 1/2 teaspoon cinnamon For that warm, cozy flavor.
  • 1/4 teaspoon cardamom This is optional, but it gives a lovely twist.
  • 1/2 teaspoon salt Sea salt if you’re fancy, regular salt if you’re normal.
  • 1/2 cup milk I use 2%, but any will work.
  • 1 large egg Make sure it’s fresh; farm fresh is best!
  • 1/4 cup melted butter Always melt a bit more, just in case.
  • to taste powdered sugar for dusting Absolutely necessary for presentation!

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a baking sheet with cooking spray.
  2. In a bowl, mix together the flour, sugar, baking powder, cinnamon, cardamom, and salt to create the dry mix.
  3. In another bowl, whisk together the milk, egg, and melted butter until well-combined.
  4. Combine the wet and dry ingredients until just mixed, keeping it slightly lumpy, and gently fold in the rhubarb.
  5. Drop spoonfuls of the batter onto the prepared baking sheet.
Baking
  1. Bake for 15-20 minutes or until lightly golden. Keep an eye out if your oven tends to bake unevenly.
  2. Allow to cool slightly and dust with powdered sugar before serving.

Notes

For serving, pair with a cup of tea or some fresh fruit for a great contrast of flavors. A good whisk and sturdy baking sheet are recommended to make the process smoother.
