  • 4 pieces medium-sized chicken breasts About 2 pounds or two large ones cut in half.
  • 1 teaspoon garlic powder You can never have enough garlic.
  • 1 teaspoon onion powder Optional, based on personal taste.
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried mustard Adds a nice touch.
  • 1/2 teaspoon chili powder Optional for added spice.
  • 1 1/2 teaspoons kosher salt Or sea salt to taste.
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or avocado oil Use what you have in the pantry.

Method
 

Preparation
  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Pound the thickest part of each chicken breast until they're roughly the same thickness for even cooking.
  3. In a big mixing bowl, toss the chicken breasts with all the spices and olive oil until evenly coated.
  4. Transfer the chicken breasts to a lightly greased baking dish, ensuring they are evenly spaced.
Cooking
  1. Bake the chicken in the oven for 18-20 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
  2. Let the chicken rest for a few minutes after baking, then brush with pan juices, slice, and serve.

Notes

Invest in a good meat pounder. You can play around with spices and add lemon juice for added flavor. Good served with roasted veggies or a side salad.
