Preparation
- Preheat the oven to 350°F (175°C). Grease and flour a bundt pan.
- In a saucepan, simmer apple cider over medium heat until reduced to about 1 cup. Let cool.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, then mix in oil, vanilla, sour cream, and reduced apple cider.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Pour batter into the prepared bundt pan.
Baking
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan for 15 minutes, then invert onto a wire rack.
- Brush warm cake with melted butter.
- Mix sugar and cinnamon, then sprinkle or roll cake in cinnamon sugar to coat.
