Main Ingredients
  • 2 cups apple cider Preferably fresh-pressed, but store-bought works too.
  • 2 1/2 cups all-purpose flour Good old all-purpose does the trick.
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon The more, the merrier!
  • 1/2 teaspoon ground nutmeg Don't skip it!
  • 1/2 teaspoon salt Sea salt is fancy, regular salt is fine too.
  • 1/2 cup unsalted butter, softened Measure after softening.
  • 1 cup granulated sugar Regular sugar is used.
  • 1/2 cup light brown sugar, packed Adds cozy flavor.
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream Makes the cake moist.
Cinnamon Sugar Topping
  • 1/4 cup unsalted butter, melted For brushing the cake.
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a bundt pan.
  2. In a saucepan, simmer apple cider over medium heat until reduced to about 1 cup. Let cool.
  3. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  5. Add eggs one at a time, then mix in oil, vanilla, sour cream, and reduced apple cider.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  7. Pour batter into the prepared bundt pan.
Baking
  1. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  2. Cool in pan for 15 minutes, then invert onto a wire rack.
  3. Brush warm cake with melted butter.
  4. Mix sugar and cinnamon, then sprinkle or roll cake in cinnamon sugar to coat.

Notes

Use a well-greased bundt pan to prevent sticking. Don't be afraid to admire your cake before serving. Keep it simple with the cinnamon sugar topping.
