Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder Make sure it's fresh for best results.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup buttermilk Regular milk can be substituted.
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Cooking
  1. Heat a non-stick skillet or griddle over medium heat.
  2. Pour 1/4 cup of batter onto the skillet for each pancake.
  3. Cook until bubbles form on the surface, then flip and cook until golden brown.
Serving
  1. Serve warm with maple syrup, fresh fruit, whipped cream, or chocolate chips.

Notes

Make sure your baking powder is fresh and let the batter rest for a few minutes before cooking.
